The pair reportedly adjust the menu to suit Korean tastes. Their signature dish is reportedly a savory monaka (Japanese confection). The restaurant is led by chef duo Kwon Young-woon and Kim Bo-mi; the pair reportedly both met while training in Japan. The restaurant is reportedly named for the restaurant's aspiration to a consistent work ethic and perfection.

He became head chef of Sushi Matsumoto in 2011.

The head chef is Park Kyung-jae. Park was born on the small island Uido (the restaurant's name refers to his home island). His father was a fisherman, and he grew up eating much fresh seafood. He moved to Seoul in 1989, just after graduating from high school without knowing what career path he would take. By chance, his friend worked in a Japanese restaurant, so he joined his friend. From then on, he worked in the industry. He worked in Ariake in the Josun Hotel and Sushi Chohee at Hotel Shilla. Sushi chefs serve sushi to guests directly on the surface of the bar; the bar is constructed from 500-year-old hinoki wood from Japan. Park reportedly sources the fish from Garak Market every day. The restaurant is owned by a proprieter, Won Jin (원진).

The area is best known in South Korea as an affluent neighborhood populated by a disproportionately high number of high-income individuals and for having some of the most expensive real estate in the country. It is known as an upmarket shopping area, with the main shopping street dubbed Cheongdam Fashion Street. Along with Apgujeong's Rodeo Street in Apgujeong-dong and Garosu-gil in Sinsa-dong, which are connected by the main Apgujeong-ro, they are seen as fashionable and trendsetting destinations.

Kim never attended a culinary school, and instead learned by working in various restaurants in Korea since 1992. It serves a variety of Korean noodle dishes, as well as fish and beef dishes. The restaurant was closed for eight months, from late 2021 to March 2022. During this time, Kim visited Europe and the United States to study food there.
