Montilla

Montilla-Moriles is a Spanish Denominación de Origen Protegida (DOP) for wines located in the southern part of the province of Córdoba (Andalusia, Spain). It is bounded by the river Genil to the east, by the river Guadajoz to the west, by the river Guadalquivir to the north, and by the Subbetic Range of mountains to the south. This region produces mainly sweet dessert wines using similar techniques to those used for the production of sherry, that is, by crianza bajo velo de flor (which involves allowing a "veil" of flor yeast to form on the surface of the must in the casks) and por el sistema de criaderas y soleras (which refers to the process of aging the wine in soleras). Apart from forming a barrier between the wine and the air, the flor also cause certain chemical phenomena in the wine which affect the taste: they consume glycerine (thus conferring a typically dry character to the wine), they significantly reduce the volatile acidity level of the wine, and they produce great quantities of paraldehydes and acetaldehydes which are responsible for the almond notes of the wines. The DOP includes the following municipalities in their entirety: Montilla, Moriles, Doña Mencía, Montalbán de Córdoba, Monturque, Nueva Carteya and Puente Genil; and covers part of the following municipalities: Aguilar de la Frontera, Baena, Cabra, Castro del Río, Espejo, Fernán Núñez, La Rambla, Lucena, Montemayor, and Santaella. Within this DO, there are two High Quality Subzones (Subzonas de Calidad Superior) consisting of land that has been selected for its special soil characteristics: Sierra de Montilla and Los Moriles Altos. Production limits are regularly set at 80 hl/ha in the main DO and at 60 hl/ha in the High Quality Zones.

Aguilar de la Frontera is a Spanish municipality and town in the province of Córdoba, Andalusia. Aguilar is located near the river Cabra, in the hilly natural region of the Campiña de Córdoba in between the Guadalquivir and the fringes of the Subbaetic ranges. It lies on the route (A-45) connecting Córdoba and Málaga. As Ancient Ipagro, it was the seat of a bishopric. Known as Bulay in the Islamic period and possessing a fortress (ḥiṣn) since the 9th century, the place changed its name to Aguilar after capitulating and passing to Christian control in 1240, soon becoming the head of the first nobiliary lordship in Andalusia (thus in the Kingdom of Córdoba), as it was gifted by the monarch in 1257. During the late middle ages, it thrived as the head of the House of Aguilar, under the Fernández de Córdoba. The town's 19th-century octagonal plaza stands out as an instance of neoclassical urbanism. Demographics are stagnant and, similarly to other municipalities in the area, population does not exceed the one it had in the 1960s.

The Campiña Sur, officially the Mancomunidad de la Campiña Sur Cordobesa, is a Spanish comarca of the province of Córdoba, in the autonomous community of Andalusia. It is formed by 11 municipalities and is between the Subbética Mountains and the Guadalquivir Valley, in the south-west of the province. Its capital is the city of Puente Genil, which is also the third largest city in the province, after Córdoba (which is the provincial capital) and Lucena.

Moriles is a town in the province of Córdoba (Andalusia, Spain). In 2018 it had a population of 3,726. The municipality covers an area of about 20 km2 and has a population density of about 194 inhabitants/km2. The town is located about 65 km south of the provincial capital, Córdoba, at an altitude of 375 m above sea level, at co-ordinates 37°26′0″N 4°37′0″W. It is known for its olive oil and fortified sherry-like wines known as Montilla-Moriles.

The Jewish necropolis of Lucena is a Jewish cemetery in Lucena, Spain. It was excavated in 2006 and has gravestones that date to as early as the 8th century CE. With 346 catalogued graves, it is the largest Jewish cemetery ever discovered in Spain.
